Here are FIVE of my go-to healthy breakfast muffin recipes – kid-approved! Make these in advance (you could even freeze some) and take the guesswork out of breakfast all week long.

Muffins are the best breakfast food.
My toddler boldly claims that muffins are the best breakfast food ever. And he’s got a point. Let me break it down for you.
- They are delicious.
- They are fun to make.
- They are EASY to make.
- They can be made in advance. (morning time saver?! Sign me up!)
- They last for days. (more time-saving magic?! YES!)
- There are TONS of yummy (and healthy!) muffin recipes out there.
- Peeling the paper off is fun. Just ask my toddler.
- They pair well with all the breakfast protein options.
- They are baby-friendly.
- They double as a yummy snack.
I mean, I could keep going. Muffins really do have it going on, don’t they?

Make muffins each week. I know, I know, it sounds awfully simple, doesn’t it? That’s because it is.
Let me tell you why this is such an excellent tip.
By making one batch of muffins each week, you have effectively prepared 3-4 days worth of breakfasts for your whole family… which means you have saved yourself oodles of time each morning.
Not to mention that you eliminated the breakfast decision fatigue that plagues us each morning.

Making muffins is a fun (and easy) kitchen activity for kids.

This weekly ‘mom task’ can be immediately transformed into a kid’s learning activity by simply inviting your children to join in.
Boom. Just like THAT, you became the fun mom AND effectively checked off a chore from your to do list. I call this a mom win.
Take the guesswork out of what to serve for breakfast.
I’ve been making a batch of breakfast muffins each week for a couple years now and it has totally transformed my mornings.
I always follow this simple formula for breakfast muffin mornings:
- muffin
- protein source
- Greek yogurt (with sprinkles of course!)
- bacon (cooked in advance in the oven)
- sausage patties or links (cooked in advance)
- eggs (scrambled, hard boiled, egg casserole, baked in a muffin tin, omelet, etc.)
- peanut butter (to dip fruit in)
- fruit
- *sometimes I’ll combine my fruit + protein and pair the muffins with a fruit + yogurt smoothie
When you follow a breakfast formula, it takes the guesswork out of what to serve each morning.
I make just about everything in advance so that way in the morning, I simply microwave my protein source (if needed) and plate the food. This takes just a couple of minutes and we get a filling, balanced, tasty meal each morning. Voila.

I swear by this HUGE mini muffin pan. In years past, I always just used the traditional mini muffin pans that make 24, but it was taking me twice as long to bake mini muffins. That’s why I upgraded to this 48 count mini muffin pan – I can make an entire batch in one go. Such a game-changer!
